In Address Book, View/Show Name As/Last, First, then View/Sort by/Name & Ascending. Press Alt or F10 if the Menu Bar is hidden.

I have this same problem, but my Address Book doesn't stay sorted. I have to sort it on "Email" address first, then sort it on "Email". Then, and only then, can I find an email address. I have to do this EVERY time I send an email. After I return to Thunderbird, the email addresses are jumbled again.
