Thunderbird user-name not being used correctly

The account details set up in Thunderbird for my email address give user name as 'Jenny and David' but incoming emails carry the receiving address (i.e. mine) as Me< ... and then my email address ..>. What do I do to get this changed? Where is the 'Me' stored? Why doesn't Thunderbird respect the data I have given?
