Does YouTube approve of the use of Easy YouTube Video Downloader or does this violate their Acceptable Use Policy?
I want to use the plug-in Easy YouTube Video Downloader so that I may utilize the videos in my educational, classroom presentations without fear of anything else popping up and/or the video being taken down.

You would do better to ask YouTube that question.
I tried that first, to contact YouTube, but I could not find an address, etc. Any suggestions??

I have not researched this and would be interested to know what you find out.
I would guess that you may be able to show YouTube Video in an educational situation if it is unedited on the original website. Any copying is likely to be prohibited or at least require written authorisation.
