it won't access, use or display my account default folders other than inbox. How can i show / use sent, spam, and other folders from the email provider's site?

I accessed the tools/accounts/copy and folder settings, but the folders do not show up there to be selected either. I have also sent a "test" email to myself that went through fine. After it was sent, a "sent" folder was created locally but a copy was not left on the mail server.

With POP the only folder you can access on the server is Inbox. This is how POP works. If you want to access other folders on the server you'd need to set up your account as IMAP.

Thunderbird can save an offline copy of your messages. It's called 'Synchronization', and it's configurable in your account settings. https://support.mozilla.org/kb/imap-synchronization

I'd strongly encourage you to turn on 'Synchronization', so that you'll be able to backup you messages locally. https://support.mozilla.org/kb/profiles-where-thunderbird-stores-user-data#w_backing-up-a-profile
