When I click on a CSV text file link, it opens directly in Firefox. But I have no entry for it in Applications, and what I want is for it instead is to open a spreadsheet application. Since you can't just enter an action directly in the Applications preferences, how might I get this to happen?

That happens if the server sends the file as text/plain. You can check the in Tools > Page Info > General

If that is the case then you will have save that CSV file and open it in that spreadsheet application.
