One person using computer now uses Apple Mail. Another wants a separate Thunderbird account. The question is: Can two separate accounts - one on Apple Mail and the other on Thunderbird - be used on one computer which is shared between two people?

Yes. You can set up whatever accounts in whatever email clients you choose.
