I try to find a way to have a unique profile for all of the users in my environement, we are using Linux workstations and need to point Firefox to use a Proxy to block some sites that are not work related. I was able to configure a default configuration, the problem is that the users still able to go the "Edit --> Preferences --> Network --> Settings" and remove the proxy configuration.

You can lock those preferences. That is the only way to prevent them from changing the proxy settings, provided that they do not have write access to the Firefox program directory.
