Emails gone from Thunderbird
Yesterday I opened up by email and noticed the last 2 and a half years of emails disappeared from my computer. I am a bit a hoarder with my emails and save them for reference. I use road runner for my server. When I looked on the server the old emails were still there. However, the recent emails the ones I received yesterday 12/1 and today 12/2 were no longer on the server. I checked my settings and I have set to not delete from server. So I have 2 issues 1. Emails disappeared from my local computer storage. 2. Thunderbird appears to be deleting emails from roadrunner server.

If you are using ESET/NOD32 security/AV then probability is high that ESET is causing your problems. I am not using ESET. I have not received any SSL errors. I think my problem is strictly with Thunderbird. For some reason 2 and half years disappeared from my local computer. They are nor archived or in my deleted folder.
Also, the emails are being deleted from by roadrunner server after they are downloaded. I do not have Thunderbird set to delete after download.
i think this happened after TB = Thunderbird auto updated itself. newer TB usually creates a new-"profile" folder. so very likely your old-"profile" with all older emails are still on your own computer (as you have said, its not in AT&T/roadrunner/spectrum server anymore, and you're not using AV/FW/SS based proxy-gateway either).
do not delete anything in your computer, do not do any "Empty Recycle bin" type of activities. (always make a backup copy (for-example: make a copy in your Desktop), before deleting anything).
if disabling "mail-protection" in anti-virus,etc software did not help, then please check this (and other) answer(s) here, and apply what is useful for your case.

Screen shots in situations like this can more accurately depict the situation that your words.
For example "emails disappeared" is ambiguous. Are the accounts listed in thunderbird but the messages are not being listed? Or are the accounts even gone in the folders pane? All of them? Are you certain the view is correct?
All of these things should be checked before attempting something more drastic, and a screen shot would help us better understand..
