It used to be that if I went to the website for a service like Zoom or GoToMeeting, and I attempted to start a meeting from the website, a window would appear asking me if I wanted to launch the service's desktop plugin. That is no longer the case and it forces me to re-download and install the desktop application every time I try.

Also, when using Sharepoint, I used to be able to select a document and choose "Edit in Word". This would also cause a window to appear asking me if I wanted to launch Word. That is also no longer the case.

Where have the application associations gone?

Unfortunately, it does not. The content types for the services I mentioned are not on the list in Preferences -> General -> Applications. They used to be listed there, but they stopped working. They are now gone because I have re-installed Firefox in an effort to fix the problem.

Since re-installing, I have attempted to launch a GoToMeeting. I was prompted to download the application launcher, but that did not add the content type to the Applications list. It is still prompting me to download the application launcher each time I try to launch a meeting.
